Thank you to our PTO for their donation to the KandA project.  We did an Internet Safety session last night for parents of elementary students and they chose to assist us in our mission!

December Class!
Cooking with KandA has a class scheduled for December 7th.  We will hold it in the Foods Room at TKHS from 6:00pm - 8:00pm.

Call me Mr. Leftover
I had no intention of sharing this.  It was just a quick weeknight dinner, using up some random leftovers.  But then I tasted it.  Oh my.  Delicious.
 

From Food Pictures

  • Sauteed some chopped onions in olive oil until soft
  • Added a couple of chopped cloves of garlic, sauteed for another 30 seconds
  • Took a couple of baby zucchini from the garden, halved and sliced and sauteed for 2 minutes
  • Added leftover Italian sausage (from making the pizza below), it had already been browned so I sauteed it long enough to warm it.
  • Added the pre-cooked pasta to the frypan, added some more olive oil and
  • salt to taste.
  • And really enjoyed my dinner.
  • And then took a picture of what was left just before I ate it for lunch the next day.
So, why do you teach your kids to cook?
Simple, because it pays big dividends.  A couple of the boys were home for the fourth and decided they wanted pizza for dinner.  It would have been simple to pick up the phone and order one.  But what fun is that.  Besides, a homemade pizza is far more delicious than a delivery pizza.  It's also a lot of fun to make, and when done properly, it's a wonderful group project.  And who can argue with the results.
 
 
The moral of the story is - teach the your kids to cook and enjoy the fruits of your efforts for years to come.
Leftovers Again?
Yeah, my wife's got it rough.  This past Sunday morning I told her she was going to have to have leftovers for breakfast.  She sighed patiently. "Okay," she said.  "If I have to."  You'd think she'd trust me by now. 
 
You see, Saturday night for dinner, I'd made my famous guacamole (see KandA recipes), a spicy black bean and corn topping (recipe yet to come) and ground beef tacos (another recipe of mine.)  We'd had a bit of everything left, so I decided to use it for breakfast.  Of course I'd also made homemade shells.  Unfortunately, they were gone so I just used a commercial soft shell.
 

 
The results speak for themselves.  I warmed up the shell and the leftovers (but not the guac), fried a couple of eggs, shredded some cheese and the result was better than good. 
 
You can easily see how to put this dish together.  The only thing the picture is missing is a dab of your favorite salsa.
 
I hope your significant other reacts to your "leftovers" the same way mine did. :-)

I am so excited with the success of the KandA Project.  I am happy to share that we have purchased over eighty children's books for the public library!!!

Pancakes and KandA
Summertime is a special time at the Thornapple Kellogg Community Library. The summer reading program for kids is exciting on a number of levels, not the least of which is the encouragement it provides kids to read. As part of this program, the library sponsors a number of fun activities. This summer, one of those activities will be a pancake breakfast. And "Cooking With KandA" will be flipping the flapjacks. Join Kevin and Angie and let us make you breakfast. Then, wander into the library and check out a couple of books. We'll be having a good time, so please plan on joining us. And please, bring your kids, grandkids, neighbors kids, kids you find wandering about and get them fed and something to read.
I'm working on it!!!
Looks like we're going to have our next cooking class in September.  The theme will be "Grazing in the Garden" and feature stuff fresh from local gardens.
 
Angie and I are already working on some truly delicious recipes (trust me, these are really good) and I know you'll have a great time.
 
We are looking for underwriters for this year's classes, so please contact us if you, or someone you know is interested.
 
Gotta go, I'm hungry.
